  • 4 large potatoes Russet or Yukon Gold, peeled and diced
  • 1 onion diced
  • 3 tbsp butter or dairy-free alternative
  • 2 cups milk or plant-based milk for dairy-free

Seasoning (Optional)

  • salt and black pepper to taste

Instructions
 

  • Peel and dice the potatoes into small cubes for even cooking.
  • In a large pot, melt butter over medium heat and sauté diced onions until soft and translucent.
  • Add the diced potatoes to the pot and cover with enough water to submerge them. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until the potatoes are tender.
  • Drain most of the water, leaving just enough to blend the soup to your desired consistency.
  • Use a potato masher for a chunkier soup or a blender for a smooth, creamy texture.
  • Stir in the milk and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  • Serve warm with optional toppings like shredded cheese, green onions, or crispy bacon bits.

Notes

For a thicker soup, add a tablespoon of cornstarch mixed with water. For extra flavor, add garlic powder or a sprinkle of smoked paprika.
