Drizzle olive oil on both halves of the ciabatta bread and toast lightly on a grill pan or panini press until golden and crispy.
Spread pesto sauce evenly on the bottom half of the toasted bread.
Layer fresh mozzarella slices, tomato slices, and basil leaves on top of the pesto.
Drizzle balsamic glaze over the layers and season with salt and black pepper to taste.
Close the sandwich, press gently, and slice into portions before serving warm.
Notes
For a crunchier bite, brush the outside of the ciabatta with butter before grilling. Try adding grilled chicken or avocado for extra protein and flavor.
