Cottage Cheese Flatbread

This high-protein, low-carb cottage cheese flatbread is an easy and delicious alternative to traditional bread. Perfect for wraps, pizzas, and sandwiches!

  • 1 cup cottage cheese full-fat or low-fat
  • 2 large eggs

Optional Add-ins

  • 1/2 tsp garlic powder for extra flavor
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F (176°C). Line a baking sheet with parchment paper and lightly grease it.
  • Blend cottage cheese and eggs in a blender or food processor until smooth.
  • Optional: Add garlic powder, Italian seasoning, and salt for added flavor, then blend again.
  • Pour the batter onto the baking sheet and spread evenly into a round or rectangle shape.
  • Bake for 30-35 minutes or until the edges turn golden brown.
  • Remove from the oven and let cool completely before peeling off the parchment paper.
  • Use as a wrap, flatbread, or pizza base as desired.

Notes

For a crispier flatbread, brush lightly with olive oil before baking. Store in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
