This high-protein, low-carb cottage cheese flatbread is an easy and delicious alternative to traditional bread. Perfect for wraps, pizzas, and sandwiches!
Preheat oven to 350°F (176°C). Line a baking sheet with parchment paper and lightly grease it.
Blend cottage cheese and eggs in a blender or food processor until smooth.
Optional: Add garlic powder, Italian seasoning, and salt for added flavor, then blend again.
Pour the batter onto the baking sheet and spread evenly into a round or rectangle shape.
Bake for 30-35 minutes or until the edges turn golden brown.
Remove from the oven and let cool completely before peeling off the parchment paper.
Use as a wrap, flatbread, or pizza base as desired.
Notes
For a crispier flatbread, brush lightly with olive oil before baking. Store in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
