  • 6 large eggs
  • 1/2 cup cottage cheese full-fat for creamier texture
  • 1/4 cup shredded cheddar cheese or preferred cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Optional Add-ins

  • 1/4 cup diced bell peppers for extra flavor
  • 1/4 cup cooked spinach chopped
  • 2 tbsp chopped green onions

Instructions
 

  • Preheat oven to 325°F (165°C). Lightly grease a muffin tin.
  • In a blender or food processor, blend eggs, cottage cheese, shredded cheese, salt, and black pepper until smooth.
  • Pour the mixture evenly into the muffin tin, filling each cup about ¾ full.
  • Add optional add-ins like bell peppers, spinach, or green onions for extra flavor.
  • Bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
  • Let them cool for a few minutes before carefully removing them from the muffin tin.
  • Serve warm or store for later use.

Notes

For a sous vide-style texture, bake in a water bath by placing a tray of hot water on the oven’s lower rack. Store in the fridge for up to 4 days or freeze for up to 3 months.
