Main Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs fresh or frozen
  • 1 cup chicken broth low-sodium recommended
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning optional

Instructions
 

  • Pour chicken broth into the Instant Pot.
  • Place the chicken breasts or thighs in the broth and season with salt, pepper, garlic powder, onion powder, and Italian seasoning (if using).
  • Close the Instant Pot lid, set the valve to 'Sealing,' and select 'Pressure Cook' (or 'Manual') on high pressure for 10 minutes (fresh chicken) or 15 minutes (frozen chicken).
  • Allow the Instant Pot to naturally release pressure for 5-10 minutes, then manually release any remaining pressure.
  • Remove the chicken and place it in a bowl. Use two forks, a hand mixer, or a stand mixer to shred the chicken.
  • Optionally, mix some of the cooking broth back into the shredded chicken for added moisture and flavor.
  • Use immediately or store for later.

Notes

For extra flavor, add 1/2 teaspoon smoked paprika or a squeeze of lemon juice before shredding. Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
