  • 4 medium golden beets washed and trimmed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp balsamic vinegar optional
  • Fresh parsley or thyme for garnish (optional)

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  • Peel the golden beets and cut them into wedges or cubes. Place them in a large mixing bowl.
  • Drizzle the olive oil over the beets and sprinkle with salt and black pepper. Toss until the beets are evenly coated.
  • Spread the beets in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 35-40 minutes, stirring halfway through, until the beets are tender and caramelized on the edges.
  • Remove from the oven and, if desired, toss the roasted beets with balsamic vinegar for added flavor.
  • Serve warm or at room temperature, garnished with fresh parsley or thyme if desired.

Notes

Golden beets are naturally sweet and do not require much seasoning. Feel free to experiment with other herbs or spices like cumin, thyme, or rosemary to customize the flavor.
