Ingredients
  

Shrimp Preparation

  • 1 lb large shrimp shell-on, deveined
  • 2 tbsp cornstarch

Seasoning Mix

  • 1 tsp sea salt
  • 1 tsp white pepper
  • 1/2 tsp black pepper

Additional Flavorings

  • 4 cloves garlic minced
  • 2 tbsp green onions chopped
  • 1 tbsp red chili sliced
  • 1 cup vegetable oil for frying

Instructions
 

  • Pat the shrimp dry, then toss with cornstarch until evenly coated.
  • Heat oil in a wok over medium-high heat until shimmering.
  • Fry the shrimp in batches for 2-3 minutes per side until golden and crispy. Remove and drain on a wire rack.
  • In a clean pan, stir-fry garlic, green onions, and red chili for 30 seconds.
  • Add the shrimp back into the pan and toss with the salt, white pepper, and black pepper until well coated.
  • Serve immediately with steamed rice or as an appetizer.

Notes

For extra crispiness, double-fry the shrimp by frying once at 325°F, letting them rest, then frying again at 375°F.
