  • 2 medium sweet potatoes peeled and diced
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tsp fresh rosemary chopped

Instructions
 

  • Peel the sweet potatoes and cut them into ½-inch cubes.
  • Heat olive oil in a large skillet over medium heat until shimmering.
  • Add the sweet potatoes in a single layer and let them cook undisturbed for 2-3 minutes to develop a crispy crust.
  • Stir occasionally and continue to cook for 10-12 minutes until the potatoes are tender and golden brown.
  • Season with salt, pepper, smoked paprika, garlic powder, and fresh rosemary, stirring to coat evenly.
  • Remove from heat and serve warm as a side dish.

Notes

For extra crispiness, cook in batches to avoid overcrowding the pan. If you prefer a sweeter version, add a drizzle of honey or maple syrup in the last 2 minutes of cooking.
