Dressing

  • 2 tbsp olive oil
  • 1 tbsp balsamic glaze or balsamic vinegar
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • In a large mixing bowl, combine the yellow watermelon cubes, crumbled feta cheese, red onion, fresh mint, and cucumber.
  • In a small bowl, whisk together the olive oil, balsamic glaze, salt, and black pepper until well combined.
  • Drizzle the dressing over the salad and gently toss to combine, ensuring all ingredients are evenly coated.
  • Serve immediately or refrigerate for 15 minutes before serving to allow the flavors to meld.

Notes

For added crunch, sprinkle toasted almonds or pumpkin seeds over the salad before serving. If you prefer a dairy-free version, substitute feta with avocado chunks.
